I am so excited to open my new restaurant in Haslemere and I look forward to serving you some of my family favourites and some classic Italian dishes soon.
I have over 20 years experience in managing and working in the catering industry both as an importer and exporter of fine foods from Italy and as a restaurateur in London. I felt it was time to take life a bit easier and start up something for me and my family. The experience I gained from working at United Colours of Benetton and launching Boscoreale, a restaurant which I have now sold, has given me the foundation to start something smaller and more intimate.
My passion is food, family and good company. I look forward to welcoming you to Carlo Independent Italian Restaurant soon and for us to laugh and love food together.

The Restaurant
Situated on the bustling Glasgow Road and just a stone’s throw from Barshaw Park, Caffé Royale has become a thriving destination for excellent Italian cuisine in Paisley and beyond.
Established in 2016 but overseen as a family run operation since 2019, the restaurant pulls off the impressive feat of being stylish and contemporary while retaining a transportive quaintness which will immerse everyone that enters in the joy of the dining experience.
On top of its friendly and attentive staff are pivotal in creating the endearingly comfortable ambiance that's come to be one of its calling cards, what makes this eatery unique is the authenticity of its food.
Our Head Chef
After undertaking a professional pilgrimage in the 1980’s, head chef Colin Guthrie has immersed himself in the traditions and techniques of the mediterranean nation of Italy.
An enthusiastic student of his craft who learned under the tutelage of Sicilian chefs in Corleone, this all important period of hands-on training was supplemented by spending time in the markets of Palermo and getting a rare glimpse into the homespun methods of the mamma’s and nonna’s whose tried and tested methods have fed generations of families.
Inspired by the teachings of the old country, there is nothing mass-produced about what we do. Everything is cooked to order and as such, patience can often be a virtue as we always strive to deliver the most rewarding and flavourful visit that we can.

Fusing the best local produce with select important items which imbue our food with the unmistakable quality of genuine Italian cooking, it goes without saying that no matter what time you pop in and what menu you choose to eat from, we prioritise freshness and always strive to outdo ourselves.
An establishment that is never stationary, our ever-changing specials menu ensures that we’re in a constant state of evolution and there’s always something new to tempt you when you pay your next visit.

LA PACHECA ROCK BAR
Lo stile autentico e il concentrato di potenza del mezzo Harley Davidson ci hanno riempito di entusiasmo, una grande passione per le due ruote e tanti chilometri in moto sono l’inizio della storia de “La Pacheca” dove non manca mai buona musica, ottimo cibo e compagni di viaggio per condividere passioni e gusti.
“La Pacheca” è una sorta di club house, che consente ai bikers in tour o agli amici local, di fermarsi per una sosta ristoratrice o per due chiacchiere in un ambiente amico che abbraccia le passioni di tanti amanti delle due ruote.
La Famiglia Lovato ed i Gemelli saranno lieti di farvi compagnia con la loro simpatia ed unicità che li contraddistingue da decenni nel settore.

Nella normale programmazione di eventi sono consuetudine le serate a tema gastronomico e a tema musicale con performance Rock Live e coinvolgenti dj set o giornate “ad hoc” con specialità tipiche per aiutare la convivialità e l’ospitalità che ci contraddistingue da anni.

Il ristorante Da nonna Gina di Acqui Terme si trova vicino al Teatro Romano della città, un ristorante tipico italiano che conserva le chiavi del suo successo nello staff qualificato, nel servizio eccellente, nella preparazione di pietanze che rimandano alla tradizione. A volte, subiscono, con un tocco di brio, l’innovazione e l’originalità dello chef Dario e dei suoi collaboratori, e ne vale davvero la pena!
Sono i nostri avventori a riconoscere la creatività del nostro personale. Se non hai mai avuto occasione di assaporare piatti che ti abbiano ispirato, al contempo, un senso di bellezza, non ti resta che venire a trovarci e vivere un’esperienza di gusto nel tranquillo ambiente del ristorante di nonna Gina di Acqui Terme.
